APPLE RAISIN BRAN MUFFINS | |
1 1/2 c. bran cereal 1 1/4 c. milk (skim) 1 egg 2 tbsp. vegetable oil 1 1/4 c. flour 1 tbsp. baking powder 1/4 tsp. salt 2 tbsp. sugar 1/2 tsp. cinnamon 1/2 c. raisins 1/2 c. chopped & peeled apple Stir cereal and milk together and let stand 2 minutes or until cereal is softened. Add egg and oil and beat well. Combine dry ingredients: flour, baking powder, salt, sugar and cinnamon and stir until moistened. Fold in apple and raisins. Spoon into muffin cups and bake at 400 degrees for 18 to 20 minutes. Yield: 12 muffins. (About 115 calories per muffin.) |
