BEAN DIP 
2 c. pinto or black beans, cooked and drained
1/4 c. onion, chopped
2 oz. green chiles
1 tsp. vinegar
1/2 tsp. cumin
1/2 tsp. oregano
1 clove garlic, minced
1/2 tsp. chili powder
1/2 c. grated sharp Cheddar cheese

(Or one 16 ounce can, drained and rinsed).

Process in food processor until smooth. Heat at 350 degrees for 15-20 minutes or heat in microwave until hot. Serve with Healthy Tortilla Chips.

Since microwave ovens vary in power, you may need to adjust your cooking time.
