BANANA POPPY SEED MUFFINS | |
2-3 ripe, med. bananas, peeled 1 egg 3/4 c. sugar 1/4 c. oil 1/4 c. orange juice 2 c. flour 1 1/2 tbsp. poppy seeds 2 tsp. baking powder 1/2 tsp. salt Puree bananas in blender (1 cup). Mix bananas, egg, sugar, oil and orange juice until well blended. Combine flour, poppy seeds, baking powder and salt. Stir banana mixture into flour mixture until evenly moistened. Spoon batter into prepared muffin tins (greased or paper cups). Bake at 375 degrees for 20 minutes. Cool on wire rack. Citrus Glaze: Beat together 1 1/4 cups powdered sugar, 1/4 cup orange juice, 1 teaspoon grated orange peel and 1 teaspoon vanilla extract. Lightly glaze muffins while warm. |
