SAVANNAH CHEESE WAFERS | |
4 tbsp. butter, room temp. 1/2 tsp. salt 8 oz. sharp cheddar cheese, grated 1 c. sifted all purpose flour 1/4 tsp. cayenne pepper Beat butter with mixer until light and fluffy. Resift flour with salt and cayenne. Add to butter and mix well. Add cheese and mix lightly until crumbly. Dough will look dry. Gather up with hands and separate into 4 balls, chill at least 3 hours or up to 3 days. Dough may also be wrapped well and frozen. Thaw dough (if frozen), and roll each piece between 2 sheets of wax paper to a thickness of 1/8". Cut into 2" rounds with biscuit cutter or scalloped edge cutter. Bake on non-stick cookie sheet for 12 minutes. Cool slightly and serve. Store in air tight container. This appetizer is great to have ready to roll in your freezer, for unexpected guests. Makes 3 dozen. |
