SWEET AND SOUR BEEF 
1 tbsp. oil
1 clove garlic
3-4 lb. beef roast (can be bottom round roast, rump roast, etc.)
3 (6 oz.) cans grapefruit juice
1 (8 oz.) can tomato paste
1 med. onion, chopped
1 lb. bag carrots
3 stalks celery or 1 green pepper, cut up
1/4 c. brown sugar

In a large Dutch oven, brown beef in hot oil. In blender mix grapefruit juice and tomato paste. Pour over salted beef. Add onions, garlic, carrots, and celery (green pepper). Cover and simmer for 3 hours. Turn beef occasionally. When done, remove beef and add 1/4 cup brown sugar to gravy and cook about 10-15 minutes. Slice beef and serve with sauce. Serves 6-8.
