CHICKEN WITH FRESH TOMATOES AND RICE | |
1 (2 1/2 - 3 lb.) chicken, cut up 2 tbsp. butter or oil 1 lg. onion, peeled and chopped 1 green pepper, chopped 2 lg. tomatoes, chopped (approx. 2 c.) or 1 1/2 c. canned tomatoes 2 c. water 1 c. uncooked reg. rice Salt and pepper Brown chicken in butter or oil in skillet for about 5 minutes. Add onion and green pepper; saute until soft but not brown, 4-5 minutes. Add tomatoes and water. If using the liquid from canned tomatoes, cut down amount of water. Cover and simmer for about 30 minutes. Add 1 cup rice, salt to taste (about 1 teaspoon) and pepper. Cover and cook for 20-30 minutes until rice is tender and liquid is absorbed. Makes 4-6 servings. |
