Cut the crusts off the bread. Mix the bread with white glue that you've diluted to about half strength with water. Experiment with different proportions of bread to glue until the bread feels thoroughly moist but not sopping wet. You can shape this special dough into shapes, animals, sculptures, etc. When it dries it can be painted.
