SKILLET FUNNEL CAKES | |
1 lg. egg 1 c. unsifted all-purpose flour 1 tsp. baking powder 1/8 tsp. cinnamon Powdered sugar 3/4 c. milk Flour 1/4 tsp. salt Cooking oil 1. Heat oil (1 1/2-2 inches) to 360 degrees. Use deep-fat thermometer. 2. In medium bowl, beat egg with milk; stir in flour, baking powder, salt and cinnamon. Mix until smooth. 3. Pour 1/4 cup of batter into funnel or turkey baster. Start in center of skillet; move in circle to make snail-like coil of rings 6 inches in diameter. 4. Fry cake, turning once, until golden brown; about 2 minutes on each side. With slotted spatula, lift cake from hot oil. Place on paper towels. Sprinkle with powdered sugar, plain or mixed with cinnamon. Makes 6 cakes. If batter thickens add a little more milk to keep thin. |
