SAUCE VERTE (BROCCOLI) FOR FISH 
3 egg yolks
1 tbsp. tarragon vinegar
Salt & pepper
1 1/2 c. salad oil
1/2 c. strained cooked broccoli
2 tbsp. cream
Cayenne

Beat egg yolks, vinegar, salt and pepper together well. Add oil very slowly and beating constantly. Then add broccoli, cream and cayenne. Serve with fish.
