BLUEBERRY BUTTERMILK PIE 
1 prepared unbaked 9-inch pie crust
11 oz. fresh blueberries
3 or 4 medium eggs
1 cup sugar
2 tbsp. all-purpose flour
1/2 cup (1 stick) butter, melted and cooled slightly
1 1/2 cups buttermilk
1 tsp. vanilla

Preheat oven to 325°F.

Place pie crust into 9-inch deep-dish pie plate. Beat eggs until light yellow in color and add flour and sugar and mix well. Add the melted butter that has slightly cooled while mixer is running. Add buttermilk and vanilla and mix well.

Place blueberries in bottom of pie shell. Pour in buttermilk mixture.

Bake at 325°F for 1 hour until pie is set and remove. Cool and serve. Store in refrigerator.

Makes 6 to 8 servings.
