CRAN-APPLE ORANGE CAKE | |
2 c. flour 1 1/2 c. Quaker oats (quick or old fashioned, uncooked) 1 c. sugar 1/2 c. chopped nuts 1 tbsp. baking powder 1 tsp. salt 1/2 tsp. baking soda 1 c. milk 3 eggs 3/4 c. melted butter 1 tbsp. grated orange peel 1 1/2 c. chopped cranberries 1 c. powdered sugar 4 1/2 tsp. orange juice 3/4 c. finely chopped apple Heat oven to 325 degrees. Generously grease 12 cup Bundt pan. In large bowl combine first seven ingredients; mix well. Add milk, eggs, apple, butter, and orange peel; mix well. Fold in cranberries. Pour into prepared pan. Bake 55-60 minutes until golden brown. Cool 15 minutes in pan; remove to wire rack. Cool completely. Combine remaining ingredients, mix until smooth. Drizzle over cooled cake. Garnish with additional cranberries and nuts if desired. |
