CREAM CHEESE ROLL 
2 (8 oz.) pkgs. cream cheese, softened
1 c. sugar
1 egg
1 1/4 c. sweet butter or unsalted butter, softened
1 tsp. vanilla
1 c. liquid coffee (cool) mixed with 2 tsp. sugar in shallow dish
2 pkg. Petite Beurre cookies

Cream together first 5 ingredients. Dunk cookies one at a time in cool coffee. Place on foil wrap, 3 cookies across - 5 or 7 down (2 layers).

Cream cheese mixture can be divided into 3 parts. Add 1/3 package instant pudding (ex. pistachio, chocolate) or cherries, chocolate chips, pineapple or nuts. Place mixture in middle row. Roll up sides and form foil around log. Should look like triangle. Slice frozen. Serve frozen or thawed.
