COMPANY MUFFINS (Oat Bran) 
1 c. flour
1 c. oat bran
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 c. brown sugar
1 1/2 c. shredded carrots
2 lg. tart apples, shredded
1/2 c. raisins
1 c. chopped pecans, optional
1/4 c. vegetable oil
1/2 c. milk
2 eggs (or Egg Beaters)
1 tsp. vanilla

Combine flour, oat bran, soda, baking powder, salt and cinnamon in large bowl. Stir in sugar. Add carrots and apples. Make a well and add oil, milk, eggs and vanilla. Stir very well. Use 1/4 cup batter per muffin cup. Bake at 375 degrees 18-20 minutes. Yields 18 muffins. These are healthy muffin and freeze well.
