BRAN MUFFINS 
1 egg
3 tbsp. vegetable oil
1 c. self-rising flour
2 sm. grated apples
1 c. milk
1 1/2 c. bran cereal
1/4 c. brown sugar
1 carrot, grated

Beat egg, milk and oil. Stir in bran cereal, let stand 5 minutes. Add sugar, apples and carrots, then flour. Fill greased muffin tins. Bake at 400 degrees for 18 to 30 minutes.
