BRAN MUFFINS | |
2 1/2 c. whole wheat flour 2 1/2 c. all bran cereal 1 1/4 tsp. salt 2 tbsp. sugar 1 tbsp. baking powder 2 c. skim milk 1/2 c. canola oil (or other vegetable oil) 5 lg. eggs, beaten (or egg substitute) 1 c. pecans or walnuts, chopped 1 c. honey 2 tsp. vanilla 3/4 c. raisins 2 c. grated carrots 1 c. drained, crushed pineapple 2 apples, coarsely chopped 3/4 c. chopped dates 12 prunes cut into sm. pieces Preheat oven to 350 degrees. Mix milk, raisins and bran together and let soak for 15 minutes to soften. Combine rest of liquids and add to bran mixture. Mix all dry ingredients, fruits and nuts and add to bran mixture. Do not overmix. Fill greased muffin cups or muffin papers to top and bake 30-40 minutes. Don't worry if you do not have all the dried fruits or nuts, just use what you have. Makes about 2 dozen. |
