“EASY AND WONDERFUL NO BAKE COOKIES” IS IN:

EASY AND WONDERFUL NO BAKE
COOKIES
 
2 cups sugar
4 tsp. cocoa
1/2 cup milk
1/2 cup (1 stick) butter
2 tbsp. peanut butter
1 tsp. vanilla
3 3/4 cups quick-cooking oats
1 cup coconut flakes

In a medium size saucepan combine sugar, cocoa, milk and butter. It's best for butter to be at room temperature.

Melt butter at medium heat and stir all ingredients together. Continue to stir until all ingredients come to a boil.

Once boiling, remove from heat and allow to stand for one minute.

Add vanilla and peanut butter and mix well. Stir in oats and coconut flakes.

Put a large sheet of aluminum foil or wax paper out on the counter and place little scoops of your new treat on it. Serve while still warm or at room temperature.

I found when making these cookies that food lion stick butter was the best to use and that it is best to use a timer when the mix starts to boil. Start your timer for one minute and don't over boil because your cookies won't come out right. I've messed up alot. And good peanut butter helps; not anything that is dry or hard.

Its all about the boiling!!! Under cook its runny, over cook its too dry!! Mine turn out good all the time.

I should've read the comments first. Tastes delicious but mine turned out too runny because I didn't boil long enough.

First thing my Granny taught me to make 42 years ago. My house is never without the main ingredients for these. :-) Big tip: you only need 1/2 a stick of butter add 1/4 cup peanut butter instead. Also make sure it is a rolling boil. I use a wire whisk here. Then exactly 1 min. No more, no less. You can use oats, or coconut (I've never used them together) or rice krispies or cornflakes etc. Also leave out cocoa for peanut butter treats. Add 1/4 cup of cocoa for really chocolate treat (my personal favorite). If you skip cocoa and add two cups of coconut instead you have haystack cookies like school cafeteria days back when they cooked all morning cooking chickens and peeling potatoes for chicken pot pie for lunch. Ah, the good old days. :-)
