MINTY WITCHES 
2/3 c. shortening
1/2 c. sugar
1 egg
1 (6 oz.) pkg. mint-flavored chocolate pieces, melted
1/4 c. light corn syrup
1 3/4 c. flour, sifted
2 tsp. baking soda
1/4 tsp. salt
Granulated sugar
50-60 thin chocolate or mint covered peppermints

Combine shortening, sugar, and egg in bowl and beat until creamy. Blend in melted chocolate and corn syrup. Sift together flour, soda and salt. Stir into chocolate mixture. Chill several hours or overnight.

Preheat oven to 350 degrees. Shape dough into balls, the size of a nickel, and roll in sugar. Place on ungreased cookie sheet and bake in a 350 degree oven for 10-15 minutes (9.5 works best for me). Let stand on sheet a few seconds before removing. Do not cool.

Turn half of the cookies upside down on rack, top with a peppermint. Top with second cookie and as mint starts to melt, carefully push cookies together so mint forms filling to the sandwich. Makes 50-60 cookies.

This is my favorite Christmas cookie from when I was a little girl, I still make it today. The past couple of years my cookie wafers are turning out thin and oily. I've always done a 50/50 blend of shortening and maragine. Why aren't they turning out anymore. Please reply since these cookies are amazing!!!
