GOURMET PEAR PIE 
8 ripe pears
Flour
Lemon juice
Cinnamon
butter
Nutmeg

B ATTER:

1 cube butter
2 eggs
1 c. sugar
1 tsp. vanilla
2 tbsp. flour

Line a 10 inch deep pan with pastry. Dust with flour. Peel, core and slice pears into shell. Sprinkle with lemon juice, cinnamon and nutmeg. Dot with butter.

Cream butter and sugar. Add eggs and flour and beat until creamy. Add vanilla and blend. Pour over pears. Bake at 350 degrees one hour. Freezes well; thaw in slow oven (225 degrees) about 2 hours.
