PEPPER STEAK WITH RICE 
3 c. hot cooked rice
1 tbsp. paprika
2 tbsp. butter
1 1/2 c. beef broth
2 green peppers, cut in strips
1/2 c. water
2 lg. tomatoes, cut in 1/8's
1 lb. lean beef round steak, cut 1/2-inch thick
2 cloves garlic, crushed
1 c. sliced green onions, including tops
2 tbsp. cornstarch
1/4 c. soy sauce

While rice is cooking, pound steak to 1/4-inch thickness. Cut into 1/4-inch strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients. Using large skillet, brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes.

Stir in onions and green peppers. Cover and cook 5 minutes more. Blend cornstarch, water and soy sauce together. Stir into meat mixture. Cook, stirring until thick and clear, about 2 minutes. Add tomatoes; stir gently. Serve over beds of fluffy rice. Makes 6 servings.
