BOB'S HEALTHY SALAD 
3 heads lettuce
3 leaf lettuce leaves
2 stalks celery, chopped
1/4 lb. spinach, chopped
1/4 lb. Mozzarella cheese
1 tomato
1/2 c. frozen peas

Wash all vegetables. In a large covered storage bowl, add tear lettuce head (discarding center ribs), leaf lettuce, celery, spinach, cubed cheese, sliced tomato and frozen peas. Serves 2 to 3 persons.

May substitute other vegetables, such as, broccoli, cauliflower, radishes, etc. No dressing needed but could be added if desired.
