BLUEBERRY MUFFINS 
1 egg
1/4 c. salad oil
1/2 c. sugar
3/4 tsp. salt
1/2 c. milk
1 1/2 c. flour
2 tbsp. baking powder
1 c. fresh blueberries or 3/4 c. frozen

Put cupcake papers in muffin pans. Beat eggs; stir in milk and oil; mix in remaining ingredients, just until flour is moist. Batter will be lumpy. Fill cups 2/3 full. Bake 20-25 minutes at 400 degrees. Makes 12 muffins.
