MARINADE FOR WILD GAME 
2 onions, thinly sliced
2 carrots, coarsely chopped
2 lg. stalks celery, coarsely chopped
4 cloves garlic, crushed
2 1/2 c. burgundy wine
Juice of 4 limes
1/2 c. extra-virgin olive oil
1/4 c. Worcestershire sauce
2 tsp. Tabasco
2 tsp. thyme
1 tsp. marjoram
1 tsp. oregano
1/4 tsp. cracked black pepper
