UNCLE BEN'S® LONG GRAIN WILD RICE
HOT DISH
 
2 1/2 c. water
1 tbsp. butter
1 box UNCLE BEN'S® long grain rice
1/3 c. chopped onion
1/4 c. melted butter
1/3 c. flour
1 tsp. salt
Dash of pepper
1 c. half and half
1 c. chicken broth
2 c. cubed chicken or turkey
1/3 c. pimento, chopped
1/3 c. chopped parsley
3 tsp. chopped slivered almonds

Measure water and butter in saucepan. Stir in box of long grain rice. Bring to a boil and cover tightly. Cook over low heat until water is absorbed, about 25 minutes.

While the above is cooking, saute onion in 1/4 cup melted butter. Blend in flour, salt, and pepper. Gradually stir in 1 cup of the half and half and chicken broth. Cook until thickened.

Mix sauce, chicken, pimento, parsley, and almond into cooked rice. May scatter almonds on top. Bake in 2 quart casserole 30 plus minutes at 425 degrees. Serves 6-8.
