CARROT MARMALADE 
4 c. water
4 c. grated or ground carrots
1 c. orange juice
1 orange rind grated or grind the whole orange
2 lemons, grind the whole lemon

Cook all of the above until tender.

Add:

1 tsp. ground ginger
4 c. sugar
1 (20 oz.) can pineapple, run through blender

Add the above to mix that is cooking. Cook until thick and clear.

Put in jars and process 5 minutes in hot water bath.
