MANHATTEN DELI SALAD 
1 pkg. (12 oz.) spiral pasta
1 1/4 c. pitted ripe olives, sliced
1 c. chopped red or green pepper
1/4 lb. hard salami, cut into thin strips
1 sm. red onion, cut into rings
1/4 - 1/2 c. grated Parmesan cheese
1/4 c. finely chopped parsley
1 tbsp. capers (optional)
3/4 c. Italian dressing

Cook pasta according to package directions.

In large bowl, combine olives, red pepper, salami, onion, cheese, parsley, capers and real Italian dressing. Add pasta and toss well. Serve at room temperature or chilled.

Substitution: Use 1 cup chopped pimiento.
