2 lbs. zucchini, washed, sliced, cooked "au dente" & drained well...very important! 1 lb. lean ground beef (can add sausage) 1 lg. onion, chopped Some garlic 2 to 3 stalks celery, sliced 1/2 lb. fresh mushrooms, sliced (or use sliced from can) 1 (3 oz. or 8 oz.) pkg. cream cheese Bread crumbs 1 tsp. oregano 1 tsp. sweet basil Salt (to taste) Pepper (to taste) Parmesan cheese, grated (for top of casserole) Monterey Jack or Cheddar cheese also Preheat oven to 350 degrees. Cook meat, onion, garlic and celery (all vegetables chopped) in frying pan, in small amount of olive oil or butter. If using fresh mushrooms, cook in separate pan and then add to meat, onion, etc. Add spices, salt and pepper to taste. Add cream cheese and mix after cream cheese softens. Mix all with zucchini and put into casserole. Cover with bread crumbs and cut down into the casserole so a few crumbs can absorb moisture. Sprinkle crumbs with grated cheese (Monterey Jack or Cheddar) and then with Parmesan cheese. Bake until heat through and bubbly. You can play with this recipe and add or subtract to your taste's content. |
