CORN MUFFINS 
1 egg
1/4 c. corn meal
1/2 c. crushed pineapple, packed in own juice
1/3 c. nonfat skim milk powder
1 tsp. vanilla
1/2 tsp. baking powder
1-2 packets artificial sweetener (if sweeter muffin is desired)

Mix all ingredients until blended. Pour into sprayed muffin pan. Makes four large muffins. Bake at 400 degrees for 8-10 minutes.
