PEAR RELISH 
1 gal. pears, peeled and cored
3 med. onions
3 sweet (not hot) red peppers
2 1/4 c. sugar
2 tsp. salt
1 1/2 tsp. mixed spices
2 1/2 c. vinegar

Put pears, onions and peppers through food chopper. Mix with other ingredients, put in large boiler and cook over medium low heat. Bring to boil and continue cooking about half an hour after it boils. Stir frequently. Seal in jars.
