BERTHA'S RHUBARB CAKE | |
1 3/4 c. flour 3 tbsp. sugar 1 tsp. baking powder 1/2 c. plus 2 tbsp. butter or oil 2 well beaten egg yolks (save whites) Mix all ingredients well. Press on sides and bottom of well greased 9x13x2 inch pan. FILLING: 1 1/2 c. sugar 4 tbsp. flour 2 egg yolks, beaten (save whites) 4 c. rhubarb Mix ingredients well and pour into crust lined pan. Bake 40 minutes in 350 degree oven. MERINGUE: 4 or 5 egg whites 2 tbsp. sugar for each white 1/4 tsp. cream of tartar Put on baked cake then bake again for about 18 minutes until light brown. (This is my Grandmother's recipe.) |
