JODI'S BREAKFAST CASSEROLE 
This was a great hit on Christmas morning. We like to take a scoop and put a couple of over easy eggs over the top.

1/2 (12 oz.) roll Jimmy dean breakfast sausage (MILD)
1/2 (12 oz.) roll Jimmy dean breakfast sausage (HOT)
5 or 6 russet potatoes, peeled and diced
1 (10 oz.) can cream of mushroom soup
1 (15 oz.) jar Cheese Whiz
1 (8 oz.) pkg cream cheese, softened
non-stick cooking spray (Pam)
salt and pepper, to taste

Grease bottom and sides of a 9x13-inch pan with cooking spray. Preheat oven to 350°F.

Brown sausage, drain grease. Peel and dice potatoes.

In a saucepan melt cream cheese, cream of mushroom soup and Cheese Whiz. Mix potatoes and sausage together then fold cheese sauce in and add salt and pepper.

Bake at 350°F for 45 minutes to an hour until potatoes are done. You don't want it to be to brown so take it out of the oven and stir every once in a while. Enjoy!
