VEGETABLE CASSEROLE 
2 cans Veg-All mixed vegetables, drained
1 can water chestnuts, sliced & drained
1 1/2 c. mayonnaise
1 1/2 c. sharp cheddar cheese, grated
1/2 c. chopped onion
1/2 c. butter, melted
1 stack Ritz crackers, crushed (34)

Mix first 5 ingredients. Put in a 10"x6" baking dish. Cover with cracker crumbs. Pour melted butter over crumbs. Bake, uncovered in 350 degree oven for 30 minutes or until heated through.

I like to use a 16 ounce package of frozen mixed vegetables, cooked and drained instead of the canned vegetables. It is more colorful than the canned ones.
