MICROWAVE EASY FUDGE 
1 lb. powdered sugar (1 lb. = 3 1/2 c. sifted)
1/2 c. cocoa
1/4 c. milk (4 tbsp.)
1/4 c. butter
1 tsp. vanilla
1/2 c. chopped nuts

Lightly grease an 8-inch square dish or line with wax paper. Set aside. Place powdered sugar and cocoa in a medium-sized, heat-resistant mixing bowl. Stir to mix. Add milk and butter to sugar and cocoa mix. DO NOT STIR.

Heat uncovered on HIGH for 2 minutes. After heating, stir just to combine ingredients. Add vanilla and nuts. Stir until blended. Pour into prepared dish; refrigerate for at least 1 hour. Cut and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I can't have dairy. I subbed coconut oil for the butter and coconut milk for the milk. Also added a pinch of salt, lots of chopped pecans and shredded coconut. Yum, yum, yum! I made fudge like this all the time as a kid. If you want to get fancy with it, let it cool enough to handle then roll it into balls. Roll the balls in sprinkles, nuts, coconut, etc. Or you can also make it into a log, roll in the same, then slice once cooled. Very forgiving recipe and easy to change up!
