MINI - MEAT LOAVES 'N VEGETABLES 
1 1/2 lbs. lean ground beef
1/2 tsp. salt
1 egg
1 (8 oz.) can tomato sauce
1/2 tsp. Italian seasoning
1 (2.8 oz.) can French fried onions
6 sm. redskin potatoes, sliced thin
1 (16 oz.) bag frozen broccoli, corn, red pepper combination, thawed & drained

Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can French fried onions. In a 9 x 13 inch pan, form 3 mini loaves. Place potatoes around loaves. Bake, covered, at 375 degrees for 35 minutes. Place vegetables around loaves, stir to combine with the potatoes. Lightly season with salt and pepper, if desired. Top meat with remaining tomato sauce. Bake, uncovered, 15 minutes. Top loaves with remaining onions; bake uncovered 5 minutes longer. Makes 3 to 6 servings.
