PEANUT BRITTLE COOKIES 
1 c. sifted enriched flour
1/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. butter or other shortening
1/2 c. firmly packed brown sugar
2 tbsp. beaten egg (reserve remainder)
1 tsp. vanilla
1/2 c. salted peanuts, finely chopped (no skins on)
1 tbsp. egg
1/2 c. additional salted peanuts (no skins on)

Sift together flour, soda, and cinnamon. Cream butter or other shortening; gradually add sugar, creaming well. Add 2 tablespoons beaten egg and vanilla; beat well. Blend in dry ingredients and add 1/2 cup chopped peanuts. Mix thoroughly. Spread or pat dough on greased baking sheet to a 14 x 10 inch rectangle. Brush with remaining 1 tablespoon egg. Sprinkle with 1/2 cup peanuts. Bake at 325 degrees for 20-25 minutes. DO NOT OVER BAKE. Break into pieces while still warm. Makes about 2 dozen.
