PEANUT BRITTLE 
1 1/2 c. sugar
2 c. white Karo syrup
1/4 c. water
1-1 1/2 c. raw peanuts
Pinch salt
1 tsp. baking soda
Buttered cookie sheet

Combine first 5 ingredients in an iron skillet and bring to a boil. Cook slowly 5-7 minutes. Turn up heat and cook until mixture turns slightly brown (spins a thread).

Remove from heat and quickly stir in baking soda thoroughly. Pour out on buttered cookie sheet and let cool. Crack into pieces when cool.

To make pecan brittle, add pecans at this point as they require less cooking.
