MUSTARD GLAZED MEAT LOAF WITH
MUSHROOMS AND SHREDDED
 
CARROTS

2 lb. ground meat
Salt and pepper
1 onion, minced
Ketchup
2 egg whites, slightly beaten
8 med. fresh mushrooms
1/4 c. ice water
1 tbsp. mustard
3 c. coarsely shredded carrots

Mix beef with 1 1/2 teaspoons salt, 1/4 teaspoon pepper and onion. Gradually add 1/3 cup ketchup, egg whites and ice water, beating constantly. In a shallow 2 quart baking dish, shape mixture in a loaf about 10 x 4 inches. Bake in moderate oven at 375 degrees for 30 minutes. Spread top with a mixture of the mustard and 1 tablespoon ketchup. Put carrots around the loaf and arrange mushrooms on top. Sprinkle lightly with paprika, salt and pepper. Bake 30 minutes longer. Yields 8 servings.
