BAKED GERMAN POTATO SALAD 
1 c. diced bacon
1 c. diced celery
1 c. chopped onion
3 tbsp. salt (or less to taste)
3 tbsp. flour
2/3 c. sugar
2/3 c. vinegar
1/2 tsp. pepper
1 1/3 c. water
8 c. cooked & peeled potatoes, sliced

Fry bacon and drain, reserving drippings. Preheat oven to 350 degrees. Return 4 tablespoons drippings to skillet. Add celery, onion, salt and and flour. Cook over medium heat, stirring gently until golden. Add sugar, vinegar, pepper and water. Bring to boil. Place sliced potatoes and bacon pieces in a 3 quart baking dish. Pour mixture over potatoes. Cover and bake 30 minutes. Makes 12 servings.
