APPLE CANDY 
4 to 5 apples, peeled
2 tbsp. unflavored gelatin
1/2 c. cold water
2 c. sugar
1 tbsp. cornstarch
1/8 tsp. salt
2/3 c. walnuts, coarsely chopped
1 tsp. lemon peel, grated
1 tbsp. lemon juice
Powdered sugar

Cut apples into small pieces and cook until very tender with a little water in a heavy kettle, stir to avoid scorching. Put through food processor and measure 2 cups of pulp. Return to heat and cook until thick, again stirring. Soften gelatin in cold water. Mix sugar, cornstarch and salt and add to apples. Cook again over low heat, stirring constantly until mixture is thick. Add gelatin and stir until gelatin dissolves and mixture is thick. Remove from heat, stir in walnuts, lemon juice and peel. Turn into 8 inch square shallow dish that has been rinsed with cold water. Let stand 24 hours and cut into rectangles. Roll in powdered sugar and place on rack until outside is dry. This can take a couple of days sometimes. Store in covered container.
