ABALONE STEAKS 
2 (1 lb.) abalone
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. flour
2 tbsp. bacon drippings
Lemon wedges

Wash abalone in cold water and cut into approximately 1/4 inch strips. Pound each strip well with wooden mallet. Season with salt and pepper and dredge in flour. Heat bacon drippings in skillet. Drop abalone in hot fat and cook stirring with spatula, for about 3 minutes or until well browned. Garnish with lemon wedges. Serves 2.
