MEDITERRANEAN SALAD 
1 clove garlic
Mashed with:
1 tsp. sea salt
Juice of 1 lemon
1 tsp. dried oregano
1 green onion, chopped
1/3 c. olive oil
Freshly ground black pepper
1 head Romaine lettuce
Garlic croutons

Mix the garlic and sea salt with lemon juice and oregano. Let set for about 10 minutes. Meanwhile, wash the Romaine and tear into large pieces. Place in a wooden salad bowl and toss with about 2 teaspoons of the freshly ground black pepper. Whisk the olive oil into the lemon juice mixture and add the green onion. Toss Romaine leaves with the dressing and add the garlic croutons. Serves 8.
