SPINACH OMELET SOUFFLE 
3 eggs, beaten
1 can drained chopped spinach
1 onion, chopped
Juice of 1 sm. lemon
3/4 c. grated Cheddar cheese
Garlic powder
Lemon pepper
Salt to taste

Preheat oven to 350 degrees. Mix eggs in bowl, add all other ingredients. Pour mixture in casserole dish and sprinkle top with bread crumbs. Bake for 35 to 40 minutes in 350 degree oven.
