BEER BISCUITS 
1 1/2 - 2 1/2 c. all purpose flour
2 tbsp. sugar
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. dry yeast
1 c. lite beer
3 tbsp. salad oil

Thoroughly blend together 3/4 cup flour, sugar, salt, baking powder, baking soda and dry yeast. Heat beer to 120 degrees. Add oil and warm beer to flour mixture. Beat 2 minutes at medium speed. Gradually add remaining flour only until dough is soft and workable.

Turn out onto lightly floured board and knead 15 times. Roll out to 1/2" thickness. Cut dough into 2 1/2" circles (a lite beer can is perfect, just remove top lid). Place on lightly greased baking sheet. Cover with clean towel and let rise in warm place about 1 hour. Remove towel. Bake at 400 degrees for 20 minutes or until nicely brown. Yield: 1 dozen.

NOTE: For a grouping of biscuits cut with a 2" cutter and place close together in a lightly greased 9" round cake tin.
