BEEF BARBECUE ON BUN 
MEAT:

3 lb. chuck roast

SAUCE:

2 tbsp. butter
1 chopped onion
1 clove garlic
1/2 c. chopped celery
3/4 c. water
1 c. ketchup
2 tbsp. vinegar
2 tbsp. lemon juice
2 tbsp. Worcestershire sauce
2 tbsp. brown sugar
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper

Melt butter. Add onion and cook until tender. Add remaining ingredients and cook 20 minutes. Cover 3 pound chuck roast with sauce in covered roasting pan. Cook at 300 degrees for 2-3 hours. Let sit in oven until cool. Shred beef and mix together with sauce in pan (remove excess grease). Serve on hard buns. Makes about 1 dozen.
