PEANUT BRITTLE 
1 c. sugar
1/2 c. white Karo
1/2 c. water

Combine and cook to soft ball stage.

1 c. Spanish peanuts

Add peanuts. Continue cooking until brittle 290 degrees.

2 tbsp. butter
1/2 tsp. baking soda
1/2 tsp. vanilla

Remove from fire and very quickly add the soda, vanilla and butter. Beat thoroughly and pour out on a heavily buttered cookie sheet. Let spread as thin as possible and then lift the edges and pull out thinner. (After adding the peanuts I keep slowly stirring so they won't settle.)

Have everything measured before starting as it has to be added very fast.
