CHOP SUEY 
1 1/2 lbs. beef strips
1 c. celery, sliced
2 tbsp. lard or drippings
1 tsp. salt
2 c. water
2 c. cabbage, coarsely shredded
1 med. onion, sliced
1/2 c. fresh mushrooms, sliced
2 tbsp. cornstarch
1/8 tsp. pepper
2 tbsp. soy sauce

Brown beef, onion, celery and mushrooms in lard, pour off excess fat. Combine starch, salt, pepper, water and soy sauce; add to beef mixture. Cook, stirring constantly until thickened. Add cabbage, cook until vegetables are tender, about 10 minutes. Serve with rice.
