LOW FAT RED BEANS & RICE | |
1/2 c. chopped onion 1/2 c. chopped green pepper 3 cloves garlic, minced 2 tablespoons olive oil 2 cans red beans plus liquid salt and pepper, to taste Hot pepper sauce, to taste seasonings (see below) 1/4 cup chunky hot or mild salsa 2 cups rice, steamed Sauté onion, pepper and garlic in olive oil until onion is translucent. Add beans with their liquid. Season to taste with salt, pepper, hot sauce, garlic powder, onion powder, cayenne pepper and cumin powder (or taco seasoning). Stir in steamed rice. Serves 4 as a side dish. To make this into a main dish, saute cubed pork or pork sausage in the first step; add onions and continue with above recipe. Submitted by: Belle |
