MARION'S DUTCH POTATO SALAD (HOT
OR COLD)
 
4 c. sliced cooked potatoes
5 slices crisp bacon
1 med. onion, chopped
1/4 c. cider vinegar
2 tbsp. sugar
1/4 c. water
Salt, pepper, parsley to taste

When bacon is fried crisp, take bacon from pan and fry onions in the bacon grease until it is translucent. Add vinegar, sugar, water and spices and bring to a boil. Add potatoes and crumbled bacon and heat 15 minutes. Sprinkle with parsley and serve.
