FISH PIE 
1 lb. white fish
1/2 pt. milk
1 lb. cooked potatoes, mashed with butter and milk
4 oz. grated cheese
1 oz. flour
1 oz. butter
Chopped parsley
Squeeze of lemon juice
Salt and pepper

Poach fish in 1/2 pint milk. Strain fish and reserve milk. Flake fish and remove any bones. Melt butter in pan and mix in flour; add to this the reserved milk to make a white sauce. Season to taste with salt and pepper, adding half the grated cheese, a squeeze of lemon juice and a little chopped parsley.

Mix fish into white sauce and put into dish. Cover fish mixture with mashed potato and sprinkle with remaining grated cheese. Bake in a medium oven until well heated through and brown on top.
