ARIZONA RICE AND BEANS 
1 c. white rice
6 scallions, cut into 2 inch pieces
2 carrots, sliced
1 tbsp. vegetable oil
1 tsp. ground cumin
1/2 tsp. salt
1 can (15 oz.) black beans, drained

Prepare white rice according to package directions. In large skillet saute scallions and carrots in vegetable oil 2 minutes. Stir in ground cumin and salt. Cook 1 minute. Stir in beans and cooked rice. Heat through. 213 calories. 6 servings.
