BROCCOLI-CHEESE SOUP 
1 pkg. frozen chopped broccoli or 1 lg. head fresh broccoli
2 cans chicken broth
1 med. onion, chopped
3/4 stick butter (Weight Watchers for less calories)
1/2 c. flour
1 tall can evaporated milk (light skimmed evaporated for less calories)
1 tsp. paprika
3/4 lbs. cheese, grated (Weight Watchers cheese (American) for less calories)

Cook the broccoli in chicken broth for 15 minutes. Saute onion in butter until tender. Add milk and flour and cook until thick while stirring.

Add to broccoli, add paprika and cheese. Turn stove to low and simmer 30 minutes. Stir often. Makes a large amount. Exchanges for 1 cup, when using low calorie ingredients: 1 F; 1/2 B; 1 V; 1 P; 1 M; 15 OPT.
